  Time for a Quick Dip
fast, refreshing holiday snacks

If you've eaten just about enough high-cal Nanaimo bars, shortbread’s and Rum balls, you may be looking for an alternative snack for that video viewing or holiday bash. Dips are quick, easy and usually inexpensive, as well as being a good break from the sugar-packed treats of the holiday season.

Popeye’s Spinach Dip
Serves 6
Prep Time: 5-7 min.

A great quick party dip.

Ingredients:
2-10oz pkgs. frozen chopped spinach, cooked and drained
1 cup plain yogurt
¼ cup mayonnaise
1 clove garlic, minced
1 medium cucumber, chopped
1 onion, chopped
1 radish, chopped

1 tsp. tarragon vinegar

Directions:
1. Combine all ingredients together in bowl.
2. Chill and serve with bread cut into cubes.


Apple Dipper

Serves 2-4
Prep Time: 5 min.

Ingredients:
1 package (8 oz) cream cheese
1 tbp. lemon juice
1 tsp. cinnamon
7-oz marshmallow creme topping

Directions:
1. Mix cream cheese and cinnamon together thoroughly with electric beater (or vigorously by hand) until fluffy.
2. Add in lemon juice and marshmallow cream and blend together completely.
3. Dip with apples, bananas or other fruit, or spread as a topping on muffins.


Orange Ginger Dip

Serves 6
Prep Time: 5 min.

Ingredients:
½ cup sour cream
½ cup Mayonnaise
¼ cup orange juice
2 tbp. honey
1/2 tsp. grated orange peel
1/4 tsp. ground ginger

Directions:
1. Mix ingredients together in bowl.
2. Cover and chill.
3. Serve with fresh fruit.


Quick Fix Festival Dip
Serves 6
Prep Time: 5 min.

A great spontaneous party appetizer.

Ingredients:
8 oz. sour cream
8 oz. guacamole
8 oz. chunky salsa

Directions:
1. Spread guacamole in bottom of shallow glass bowl.
2. Add layer of sour cream followed by layer of salsa.
3. Serve with plain tortilla chips, vegetable dippers or crackers.


Salsa El Snappo
Serves 6-10
Prep Time: 1 hr.

Ingredients:
5 large tomatoes
1 bunch green onions
2 or 3 jalapenos
½ bunch cilantro
1 clove minced garlic
pepper

Directions:
1. Chop tomatoes, onions, jalapenos and cilantro.
2. Add minced garlic along with pepper to taste.
3. Let sit at room temperature 45 min.
4. Serve with tortilla chips.


Cheesed Off Bean Dip

Serves 6-10

Prep Time: 45 min.
Cook Time: 20 min
.

Ingredients:
6 tbsp vegetable oil
3 eggs (lightly beaten)
1 large cooking onion (chopped)
1 large green pepper (seeded and chopped)
1 cup frozen mixed vegetables
½ pound mushrooms (thinly sliced)
6 cups cold, cooked rice
1-2 cups cubed, cooked chicken, ham or pork (optional)
Soy sauce

Directions:
1.
Heat oil on medium heat in small saucepan.
2. Add in beans and cook until soft.
3. Mix in water and picante sauce.
4. Add cheese gradually to pan until cheese is entirely melted.
5. Remove from heat and cool.
6. Serve in bowl along with nachos or crackers.
